This frozen cherry pie made my day. I prepared it for the arrival of guests and did not miss. The cherry pie turned out to be extremely successful. Beautiful, ruddy, with a lot of incredibly tasty cherries, moderately sweet, in a word - impeccable. As I pondered what made this frozen cherry pie so incredibly delicious, I came to the conclusion that it was mostly the combination of tart cherries and sweet dough. Personally, I really liked the pie.

And I cooked it relatively quickly. This cherry pie doesn't require any special fuss. The only thing that can cause a slight delay in the preparation of this pie with frozen cherries is the seeds, which should be removed from the frozen cherries (and the latter, accordingly, must be thawed beforehand). Everything else in the recipe is a matter of minutes.

I would also like to say a few words about frozen cherries. Why is the pie with this filling? Now it’s the height of spring and fresh berries are still far away, but many freezers (like mine) still have summer stocks of frozen cherries. I usually make such reserves of cherries in sufficient quantities to add them to compotes in the winter or to make cakes and pies from them. So, spring is in full swing, but the cherries in the freezer are still not running out. And this is a good reason to make such a wonderful pie from it.

Ingredients:

  • 500 g frozen cherries (weight with pit)
  • 150 g flour
  • 100 g butter
  • 2 eggs
  • 150 g sugar
  • 1 teaspoon baking powder (not heaped)
  • 1 teaspoon vanilla sugar (not heaped)

How to make frozen cherry pie

Butter (100 g) should be taken out of the refrigerator in advance and given time to soften a little. We will work with soft butter, otherwise you simply will not be able to mix butter and sugar.

So, combine 100 g of butter and 100 g of sugar (we will leave another 50 g of sugar for later). Using a mixer, mix the ingredients until more or less homogeneous and creamy.


Add two eggs to the butter and sugar and continue working with the mixer. The mass will become more liquid.


This is the mass you should end up with after a few minutes of starting to prepare the dough for a pie with frozen cherries. But this is still not dough.


Add 150 g of flour, vanilla sugar and baking powder to the bowl. Let's work with the mixer for about three minutes, as a result of which we will get a fairly thick, creamy dough for a pie with frozen cherries.


We take out the baking form. It’s better to take a detachable one (mine is 19 cm in diameter). Line the bottom of the mold with a piece of parchment. Then put the dough from the bowl into the mold and, using a silicone spatula or just a spoon, distribute the dough evenly over the entire area of ​​the mold.

Set the pan with frozen cherry pie dough aside. Now is the time to turn on the oven to preheat. Set the temperature to 180 degrees.


While the oven is heating up, let's take care of the frozen cherries. I thawed my cherries in the microwave and then removed the pits. I threw the cherry into a colander and thoroughly squeezed the juice out of it with my hands.


Let's return to the form with the dough. Take half the volume of cherries and distribute them evenly over the surface of the dough. Then gently press the berries directly into the dough with your hand, not deeply.

Take the second half of the cherry and place it on top of the first layer. Sprinkle the remaining sugar on top of the cherries.

Place the pie pan in the oven for 50 minutes. The time is approximate and depends on the volume of your mold and the properties of the oven. Starting 45 minutes from the moment you start baking the frozen cherry pie, watch carefully and check its readiness. We bake the pie on the middle rack and, preferably, in the top-bottom mode.


My frozen cherry pie is ready, which I confirmed by piercing it with a toothpick in the very center and pulling it out completely dry.
