There are many quick recipes for cottage cheese.

General principles for preparing cottage cheese dishes in a hurry

The key to delicious cottage cheese dishes is good cottage cheese. It should not be too sour, moderately moist, not hard.

Curd dishes can have both sweet and salty taste. When making cottage cheese dishes, other dairy products are used - butter, sour cream, milk. As well as eggs, fruits, berries, dried fruits. Black pepper, dill, parsley, and cumin are great for unsweetened curd dishes.

Ingredients

200 grams of cottage cheese

100-150 grams of butter

Salt to taste

Tablespoon chopped fresh dill

Teaspoon sesame seeds - optional

Cooking method

Soften the butter at room temperature. If you take more of it, the mass will look like curd butter; if you take less, it will look like soft, fatty cottage cheese.

Pass the cottage cheese through a meat grinder or rub through a sieve; if you have a blender, you do not need to do this.

Combine butter and cottage cheese, add salt.

Mix well with a spoon or blender.

Add herbs and cumin.

Serve with black or white bread. It is very tasty to consume this mass, putting it on hot boiled potatoes.

Advice: If the cottage cheese is a little dry, a spoonful of light cream or sour cream will correct the situation. If desired, the mass can be peppered or seasoned with chopped garlic.

Using damp palms, roll into small balls.

The casserole is fluffy and especially tender - due to the fact that starch is added here instead of flour or semolina. Sweetness can be varied by increasing or decreasing the amount of sugar.

Ingredients

3-4 eggs depending on size

One and a half cups of granulated sugar

2 tablespoons sour cream

2 heaped tablespoons starch

Vanillin on the tip of a knife

Separate the white and yolk of the eggs, add a few grains of salt or citric acid to the whites and put them in the refrigerator.

Mix cottage cheese, sugar, yolks, sour cream, starch, vanillin.

Beat the whites first at low speed, gradually increasing until well foamed.

Carefully fold the whites into the curd base and add the raisins.

Place everything in a mold greased with butter and sprinkled with breadcrumbs.

Leave in the oven for another 20 minutes.

Serve with sour cream, jam, condensed milk or just tea.

Advice: It's not uncommon for this casserole to fall off, especially if you take it out of the oven ahead of time. This does not affect its taste. However, if you want to preserve the splendor of the dish, you need to use not an oven, but a multicooker, the “baking” mode.

Quick casserole – cottage cheese and apple

Pour the mixture over the toasted apples and place in the oven.

Place in the refrigerator for half an hour to an hour until set.

Turn out onto a flat plate and cut into pieces.

Advice: You can use the microwave to melt the gelatin. This way it won't burn. It’s just advisable not to set it for a long time, but to check the condition at short intervals. Use porcelain or plastic dishes. If you puree red berries before mixing with cottage cheese, you can get a beautiful pink jelly.

Recipe for quick cookies "Crow's feet" from cottage cheese in a hurry

The dough for these cookies is pure magic: it is prepared quickly with a minimum amount of ingredients. “Crow’s feet” from cottage cheese dough are also baked very quickly. And you can involve guests or household members in making cookies - this is a rather interesting process.

Ingredients

200 gr. cottage cheese

200 gr. butter or margarine

2 cups flour approximately

1 cup sugar for coating cookies.

Cooking method

It is advisable to let the oil sit for about an hour in a warm place so that it softens.

Mix, rubbing well, cottage cheese and butter or margarine.

Add flour in small portions and knead into a soft but not runny dough.

Roll out part of the dough into a large layer, cut out circles with a round mold.

Pour sugar into a plate.

The main thing in these cookies is to form them correctly. The procedure is as follows:

Place one side of the dough circle on the sugar.

Fold in half with sugar inside.

Place one side of the folded half on the sugar.

Fold it in half again with the sugar inside.

Place the rolled quarter on the sugar, pressing down slightly.

Turn over and place on a greased baking sheet.

You should end up with triangles called “legs” with sugar on top.

Bake at medium temperature for 20-30 minutes. The cookies should brown to a light brown color. Sometimes they lose their shape, spreading a little. This can happen if the curd is too wet or there is not enough flour in the dough. However, the taste of the cookies does not suffer at all from this.

Advice: You can add cinnamon to the sugar for dipping the cookies, this will make the liver very fragrant. You can choose a savory option - instead of dipping, add a little salt to the cookies during the shaping process. You can add black pepper and cumin to the salt. Of course, you need to take much less salt than sugar. These salty cookies go well with broth or beer.

Pancake pie - a quick curd recipe

Baking pancakes is not that fast. But when you have ready-made homemade or store-bought pancakes, preparing this pie will not be difficult. And the result will exceed all expectations - the dish is very beautiful, tender, tasty.

Ingredients

10 thin pancakes

For filling:

500 gr. cottage cheese

1 chicken egg

Half a glass of sugar

Vanillin optional.

You can add raisins, chopped dried apricots, candied fruits, fresh berries or pieces of fruit, or you can do without it.

For filling:

2 tablespoons sugar

A glass or a little less sour cream.

Cooking method

Mix the ingredients for the filling. In this case, the cottage cheese should be soft and tender, otherwise it must be passed through a meat grinder.

Place the filling on each pancake and roll it up.

Place the resulting tubes tightly into a greased pan. It is best to lay out in the form of a spiral.

Combine the filling ingredients, mix well or beat lightly.

Pour the mixture over the pancake tubes, stir them slightly with a fork so that the liquid flows into the voids.

Bake for half an hour in the oven over medium heat.

Advice: Instead of pancakes, they often use thin Armenian lavash, cutting it into pieces. This is a good option, but the pie will be a little tougher. You can prepare a pancake pie with unsweetened curd filling - exclude sugar from the filling and filling, adding salt, pepper, and herbs.

Tricks and secrets for whipping up cottage cheese dishes

Cottage cheese should undergo minimal cooking. That is why the baking time for cottage cheese pies or cookies is no more than half an hour in the oven over medium heat.

All cottage cheese dishes have an excellent taste, but when cooked, cottage cheese loses some of its beneficial qualities for digestion. Therefore, it is preferable to use cottage cheese that has not undergone heat treatment.

It is not advisable to add baking soda to cottage cheese, especially in large quantities - soda reacts with acid, and the cottage cheese loses its structure. This property is used in the making of homemade cheese. But in baking, it can do a disservice - the dough will spread, fry, and the product will lose its shape.

In many cottage cheese recipes, the sugar used can be replaced with honey - this will add a wonderful flavor to cottage cheese dishes.

Bon appetit!

Combine the cottage cheese, rubbed through a sieve with a metal mesh, with melted, but not brought to a boil, butter and beat with a blender into a fluffy mass. Take one half of the dough out of the refrigerator and spread it over the prepared pan using parchment, butter and breadcrumbs. It is better to do this by hand, building low test sides. Lay out and smooth out all the curd filling. Rub the remaining half of the pie dough onto the filling; you can pass it through a large meat grinder, turning it into long thin sausages, which will look unusual and original on the pie.

Turn the oven to 180 degrees before forming the cake. Send the filled dough form for baking. After an hour, check the readiness of the treat (with a long wooden skewer or toothpick). Cottage cheese pastries are among my favorites too. My mother-in-law's neighbors keep a cow and we often take the most delicious and fresh village cottage cheese from them. I add it to the filling for Serbian gibanica, prepare homemade tiramisu from it and an excellent “spread” for, ciabatta (recipe) and. Sweet pies with curd filling are also held in high esteem among us.

Recipe Author's Notes

  • If you add 200 grams of flour to the dough, you can form balls and bake cookies. It will also be very tasty, but not as tender as a pie.
  • You can add washed and dried raisins to the pie, which will give the pie its own amazing note.

Sand

This shortbread pie (recipe) is very easy to make. It takes quite a long time to bake, but active cooking does not take much time. In addition, all the steps of the technological process are so simple that even the most inexperienced housewife can master them. The baked goods will delight you with a delicate taste and will surely become a favorite in your family.

Cheesecake with cherries

This pie can be baked according to the previous recipe, just add 250-300 grams of fresh or freshly frozen pitted cherries to the filling. Or you can skip the dough and make a classic cookie cheesecake.

Base ingredients

  • 400 g of easily crumbled cookies (almost any kind).
  • 200 g of excellent quality butter.

Filling

  • 500 g of cottage cheese, cream cheese or Philadelphia cheese.
  • 200 ml heavy cream.
  • 4 eggs.

How to cook

  1. Grind the cookies in any way - in a food processor, blender or just with a rolling pin. Mix with melted butter, distribute evenly, carefully pressing to the bottom and walls, in a mold with a diameter of 24-26 cm, forming sides. Place in the freezer while you prepare the filling.
  2. Using any miracle of kitchen equipment, beat together cottage cheese with flour, cream, sugar. Continuing to beat, add eggs one at a time until fluffy.
Remove the pan from the freezer, pour in half the filling, lay out the pitted cherries (let them drain first). You can simply “drown” the cherry by pouring out all the filling at once.
  3. Bake in an oven preheated to 170-180°C for about an hour (in my oven). We determine readiness this way: if the filling does not ripple around the edges, but the middle still “quivers,” then the cheesecake is ready. Let it cool in the mold, cool it in the refrigerator for at least 6 hours (if you can stand it that long, of course).
