2. Break eggs into a bowl and add granulated sugar.




3. Beat them with a mixer until a fluffy bubbly mixture forms.






4. Pour a glass of heated milk into the egg mixture.




5. Add salt and sifted wheat flour in small portions. Mix everything well with a whisk or mixer so that there are no flour lumps.




6. Final stage of preparation. Add sour cream and melted butter. Mix.






7. Finnish Pannukakku pancakes are prepared in the oven, in one large pancake. Therefore, remove the baking sheet from the oven and cover it with parchment paper, or you can use any large, rectangular baking dish. Which also needs to be covered with parchment paper or a silicone baking mat. Pour half of the prepared dough onto a baking sheet, making two large pancakes in total. And put it in the oven for 30-40 minutes, the temperature in the oven should be 200-220 degrees.




9. The surface of the finished pancake will be lumpy, but after a while it will settle. In fact, the pancake is already ready, you can cut it into portions and serve, but with the filling it turns out tastier and more interesting.




8. Therefore, let’s prepare the curd filling for the pancake. To do this, put cottage cheese, sour cream and sugar in a bowl. Mix until smooth. The curd filling is ready.




10. Let the pancake cool for a while, then turn it over to the other side and grease it with cottage cheese filling.






11. Spread jam on top (I used strawberry).




12. Roll the pancake into a roll. Place in the refrigerator for half an hour.

Is it like this for you? To be honest, I don’t. In the morning I wake up with only one desire - to have a hearty breakfast. During the week it’s always oatmeal with banana, dried fruits and honey. Of course, a piece of chocolate and strong coffee, but first there must be porridge.

What does a weekend morning mean to you? I’m sure that when you mention the phrase “weekend”, your associations are completely opposite. A day off, I would like to believe, is a holiday in any family. And the holiday must certainly begin with an excellent breakfast - so that the day is successful! I try to cook something mind-blowing for breakfast every weekend so that together we can feel all the charm of a sweet awakening and celebrate this miracle with something truly delicious. After all, there is always something very tasty at the holidays!


This time I prepared an absolutely elementary dish. On some foreign forum I read about the traditional Finnish pancakes - Pannukakku. This type of pancake, unusual for us, is prepared on the eve of the Nativity of John the Baptist, June 24th. Housewives mix the pancake mixture in advance and take it out in a large glass bowl. People light a fire and wait patiently for the coals to glow red hot. Then the dough is poured into special frying pans with long handles, and everyone fries sweet, aromatic pancakes directly over the fire. Most often, Pannukakku is served with fresh raspberries.

I think the tradition is amazing! It’s a pity that we can’t light a fire amidst the January snow, so we’ll bake Finnish pancakes in the oven!

Pancakes in Finnish style Pannukakku



Ingredients (2-3 servings):

3 eggs;
- 50 g butter;
- 250 ml. milk;
- 100 g flour;
- 2 tbsp. Sahara;
- ¼ tsp. salt.

How to do:

1. Heat the oven to 220 C.
2. Melt the butter and grease a baking tray with it (mine is 25x35 cm).
3. Beat the eggs until slightly foamy. Continuing to whisk, pour in lukewarm milk. In another bowl, mix flour, sugar and salt, pour in the milk mixture in a thin stream. Pour the dough onto a baking sheet and bake for 22-24 minutes.

I served with maple syrup, brown sugar and cinnamon. It will be very tasty with honey, confiture, condensed milk and even sour cream or whipped cream. Fantasize as you please!

I would also like to note that I found many options for preparing pancakes in Finnish on the Internet, made several, and eventually “derived a formula” that was ideal from my point of view. But you can try reducing the amount of flour to 70 g, and eggs to 4. For us, 4 eggs was a lot, it looked very much like scrambled eggs)) Although, as far as I understand, the point is in a large number of eggs.

Impression: The dish turned out to be incredibly tasty and unusual at the same time. If you are thinking about how to diversify your breakfasts, and perhaps surprise your loved ones, then I advise you to cook a real Finnish pancake! Let at least one of your mornings be Finnish.

Pancakes, pancakes, pancakes, well, who doesn’t love them. Our family is no exception; we bake pancakes and pancakes quite often, in different variations, with different fillings. Well, in honor of such a holiday as Maslenitsa, the main attribute of which is pancakes, I wanted something new and unusual. And on the Internet I came across a rather interesting recipe for Finnish Pannukakku pancakes baked in the oven. Of course, I liked this option for baking pancakes; you don’t have to stand at the stove, it bakes itself.

Baked Pannukakku pancakes can be made both sweet and neutral. They can be served as a light snack with fresh salads or meat dishes. Or you can eat it as a separate dish and serve, for example, with condensed milk, jam, fresh berries, sour cream, honey.

I found several options for preparing pancakes in Finnish, the composition is almost the same everywhere, but the proportions are different. I myself have only been to Finland once, and then only for a few days, and, unfortunately, I didn’t have a chance to try real Finnish pancakes.

Melt the butter in a water bath or in the microwave, as I did, and leave it to cool.

Sift the flour

add salt and sugar to it. If you make unsweetened pancakes, then do not add sugar, and if you like them sweeter, then you can add more sugar, for me 2 tbsp. spoons of sugar are just right. Now whisking, gradually add milk.

Add the cooled melted butter there and mix everything.

In a separate bowl, beat the eggs until fluffy. I beat everything with a blender with a whisk attachment.

Add beaten eggs to the milk-flour mixture and mix with a spoon.

Let our dough rest for 30 minutes in the refrigerator.

Preheat the oven to 200 degrees. Next, depending on what you will bake in. You can do it on a baking sheet greased with butter or lined with parchment paper; I think it’s more convenient with paper. I baked it in silicone molds, didn’t grease it with oil, everything came out great. Pour the dough onto a baking sheet or into a mold. I made the dough into 2 molds, into one of them (round) I decided to add frozen berries (red currants, raspberries and plums), having previously defrosted them.

Bake in the oven for 30 minutes, during which time the pancakes are well baked. This is what happened to them in the oven. I don’t know why the edges began to rise so much, perhaps the layer of dough should have been poured thinner.

Let cool and cut as desired. As you can see, the edges of the cooled pancakes have settled a little, but not completely.

I cut out a pancake with berries from a round shape using cookie cutters, and my husband immediately ate the scraps.

Well, the dog was left in its original form, pieces were cut off from it, but it did not live very long, however, like all the other pancakes. Of course, it turned out much more interesting with berries; they add sourness to the pancakes.

My son ate his pancakes with sour cream, washed down with compote, my husband and I just had tea. INGREDIENTS

For 6 servings you will need the following:

  • Flour - 250 G;
  • Fresh eggs - 3 pieces;
  • Butter - 50 G;
  • Sugar - 2 tbsp. spoons;
  • Powdered sugar - Three large spoons;
  • Milk - Half a liter;
  • Sour cream - 200 G;
  • Salt - One small spoon;
  • Frozen cherries - 100 gr.

COOKING

  1. So let's get started! First, let's prepare the liquid part of the dough. To do this, beat the eggs into a bowl, add sugar and salt there. After this, beat everything thoroughly (you can use a whisk or a mixer, shorter than you are used to doing it). As a result, the liquid mass should “grow” by about 2 times. Next, add butter (pre-melted) and slightly warmed milk to this mass.
  2. Next, pour our batter into the sifted flour. We do this in 3 steps (that is, not all at once!) Then mix thoroughly with a spatula (you can again use a blender at low speed). Then we let the dough rest a little, about 20 minutes.
  3. Now let's take a baking sheet. Cover it with special baking paper. Pour out the prepared dough. The thickness of the dough layer should be no more than 5 mm (preferably).
  4. After the lazy Finnish pancakes are prepared for baking, place the baking sheet in the oven preheated to 200*C. Bake pancakes for 25-30 minutes.
  5. After this, cut the pancakes into portions. Place on plates and grease them with filling. Serve to the table.
  6. The filling may vary. For us it is well-mixed sour cream with powdered sugar and pitted cherries.

How to quickly cook pannukakku pancakes

Turn on the oven. It should warm up to 200–250 degrees.

Then take eggs, beat with sugar and a pinch of salt, pour milk into the mixture, mix well. Pour in the flour mixed with baking powder in portions and whisk everything again until the lumps disappear.

Add the melted butter, stir again and pour the dough onto a greased or parchment-lined baking sheet. Bake the Finnish pancake for about 15–20 minutes (depending on the oven). Grease the finished pancake with butter and cool slightly.

Sweet cottage cheese filling for pancakes recipe

For the filling you need to grind the cottage cheese with sugar. If the resulting mass is a bit dry, add a couple of tablespoons of sour cream or yogurt. Grease the pancake with filling, add berries, roll into a roll. To serve, cut the roll into pieces and sprinkle with powdered sugar.

This quick pancake recipe requires 5 minutes of mixing and 20 minutes of baking. Making it for breakfast is simply a miracle! Don't worry if the pancake rises too much while baking in the oven. It will settle after cooling.
